RECIPE: Kimchi Chigae with Tuna

I made Chamchi Chigae last night for the family and have brought leftovers for lunch, to the office today. :) 

After living in South Korea for 7 years -- one of the few dishes I managed to master was the 'Chamchi Chigae' (otherwise known as 'Kimchee Chigae with Tuna' -- Kimchee Soup with Tuna.) This dish is yummy, healthy, and one of my favorite things to whip up as a quick meal. Here is my recipe: 

Ingredients: (Serves 3~4 ppl)
1kg Mat Kimchee packet
2 cans Tuna (170~220grams per can)
1 teaspoon brown sugar
2 table spoons soy sauce
1 tablespoon GochuJang
Spring Onion to garnish
1 large onion sliced
2 cloves garlic minced
1 tablespoons sesame oil
3 cups Water

Method:
I usually buy two cans of tuna for this recipe, because my family loves chunky mouthfuls of tuna in this particular dish.

Mat Kimchee
I used Mat Kimchee, which is the most widely available cabbage kimchee in my local supermarket. You can also opt to make your own, or  buy any other brand you may prefer. 


Make sure one of the cans of tuna is 'in oil'. The other can of tuna may be in brine or water. Drain the oil from the tuna can into a saucepan, then add the sesame oil.

Heat the oil, then add the minced garlic. Once the minced garlic catches a golden color, add half of the kimchee and fry with the garlic for about 5-10 minutes, constantly stirring and evaporating any excess moisture. Add remainder of the kimchee and stir fry for an additional 5 minutes. 

Gochu Jang
Next, add both can's of drained tuna to the kimchee mixture. Now add the onions, brown sugar, Gochu Jang and soy sauce. (Tip: The brown sugar intensifies the soup flavor. If you do not have brown sugar, substitute for regular sugar, or this ingredient may be left out, but won't taste the same.)

I bought this Gochu Jang (Korean chilli paste) usually found in super markets, but again, any brand will do. 

Add water to cover the mixture and bring to a boil, (note: you may not need all 3 cups of water.) 

Simmer on a high heat for about 15~20 mins and then voila!! Serve with rice, other kimchee side dishes and seaweed. 

This meal is quick, easy, cheap, and very flavorful.
